Toronto’s Financial District Welcomes Rosalinda to the Neighbourhood
Restauranteurs Grant Van Gameren (Bar Isabel, Tennessee Tavern, Quetzal, etc.), Max Rimaldi and Jamie Cook (Pizzeria Libretto, Enoteca Sociale) are at it again. The three have teamed up to open Rosalinda, a 136-seat vegan Mexican restaurant in downtown Toronto.
The menu, developed by executive chefs Kate Chomyshyn and Julio Guajardo – the culinary team behind Quetzal and El Rey – will be completely plant-based and focus on Mexican and Baja flavours.
“The Toronto dining scene has evolved so much since we first started talking about this concept,” says Cook. “We’re excited to be opening Rosalinda at a time when people are more open than ever to incorporating meatless dining into their lives.”
Van Gameren, Rimaldi & Cook have partnered with Concrete to create Rosalinda’s brand identity, including website, signage, and menu design.
